Sofia Sanchez, MBA ’16, is a dietitian working with Austin Robinson, who earned his PhD from UIC in rehabilitation sciences. Sanchez and Robinson have spent the last year carving out a niche in the market for their beet-based protein bar, BeetStrong, which took second place in the 2016 Startup Challenge at UIC Business.
